HERBY CHICKEN TRAYBAKE
Another simple mid week dinner. Just add your choice of Veg
PROTEIN:
Chicken Legs or Breasts
CARBS:
Potatoes
FATS:
Olive oil
VEG:
You choose - try seasonal
OTHER INGREDIENTS:
6 x Garlic Cloves
2 x Sprigs of Rosemary
1 x Lemon
METHOD:
Preheat oven to 180 degrees, slice potatoes and place in a roasting tray with tumb size of oil, salt and pepper. Lightly squash and add the unpeeled garlic, toss well. Add the chicken on top. Bake for 40 minutes.
When the times up, mix the potatoes, strip the rosemary and speed peel the lemon zest. Add another thumb size of oil and sprinkle into the tray. Squeeze over half of the lemon juice and then return to the oven for 10 minutes.
Serve with your choice of veg
