QUICK & EASY CHICKEN & APRICOt TAGINE
INGREDIENTS
Olive oil
Skinless boneless chicken thighs
Onions
Garlic cloves
Saffron threads
Ground Ginger, cumin & cinnamon
Dried apricots
Lemon
Honey
Corriander
Water or Stock
Flaked Almonds - toasted
Couscous
Your choice of veg to stir through
METHOD
In a large saucepan heat the olive oil, season the chicken and brown both sides. Remove from the pan and set aside. Add remaining oil, onions, garlic, salt and pepper. Saute for 10 minutes until soft and golden.
Add the spices, saute for 1 minute then add the chicken, apricots, lemon juice, honey and half of the coriander. Pour in the water or stock and cook on a low heat for 30 minutes until chicken is tender. Sprinkle with the rest of the coriander, toasted almonds and warm couscous. This is when you can stir your chisen veg through such as spinach
