CRISPY GARLICKY CHICKEN
A great recipe to improvise with and add a bit of a crunch to your chicken.
PROTEIN:
1 X Chicken Breast
VEGE:
Rocket, salad or any seasonal veg
CARBS:
1 x Slice of stale Rye bread
1 x cupped handful of your choice. I chose quinoa.
FATS:
Roughly 1 tablespoon olive oil
OTHER INGREDIENTS:
1 X Garlic clove
1 x Lemon
METHOD:
Place chicken breasts in-between two sheets of baking paper and flatten them to about 1cm thick. Tear bread into food processor, peel, chop & add the garlic. Blitz to breadcrumbs. Pour crumbs over chicken and flatten crumbs into the chicken.
Put the pan onto medium heat. Fry the chicken in 1 tablespoon of olive oil, roughly 3 minutes each side until crisp. Add salt and pepper if you wish and sprinkle with your lemon dressed rocket or seasonal veg.
